Dried Bonito Flakes are used
as a base for many Asian stocks and sauces,
these dried tuna shavings from Japan are the
main ingredient for dashi.
A kind of seasoning used in Japan made by shaving
slivers off boiled dried bonito.
Sprinkle some of these flakes into boiling water
and the flavor and fragrance will be transferred
to the water. Strain, and use the flavored water
when preparing Japanese dishes, and the strained
flakes can be dipped in soy sauce and eaten
on rice.
Dried Bonito Flakes come from Bonito fish which
has been cut in half and then dried until it
becomes like a piece of driftwood. It is shaved
into thin flakes to be used as the base for
Japanese soup stock. This creates the basic
and essential flavor of Japanese cooking.
Dried Bonito Large Flakes are ideal for making
"dashi" or Japanese soup stock. The Small flakes
make a rich stock for noodles or miso soup or
can be used to sprinkle, a popular cold dish
or for adding extra flavor to Japanese dishes.
